Make the vinaigrette by combining rice vinegar, lime juice, sesame oil, sugar, fish sauce, and soy sauce and whisking until combined. Place red onions into the vinaigrette while the other ingredients are prepped. Stir to coat and let them sit. Slice honeydew melon into thin slices and arrange on a large plate. Sprinkle cucumbers over top of the honeydew. Remove the marinated onions from the vinaigrette and add them to the salad. Add mint leaves and cilantro over top along with the chopped cashews or peanuts. Drizzle the vinaigrette over top and toss to combine. Serve immediately.
