1 Lb. Boneless Pork Chops or Tenderloin, sliced very thin
1 Super Starr Papaya, sliced into thin strips
2 Finely Minced Garlic Cloves
1 Tbsp. Grated Ginger
1 Serrano Chile, sliced thin
1/4 Cup Soy Sauce
1 Tbsp. Brown Sugar
1 Tsp. Fish Sauce
1 Tsp. Cornstarch
1/4 Cup Green Onions, sliced thin
1 Tbsp. Avocado Oil
Jasmine Rice
Directions:
Heat a wok over medium low heat and add avocado oil.
Add ginger and garlic and gently heat to release the aromas.
After about 2-3 minutes, add the pork to the ginger and garlic and brown on all
sides. Don’t turn too often so that the meat will caramelize on all sides.
While meat cooks, make the sauce by combining soy sauce, brown sugar, fish
sauce and cornstarch to a small bowl and whisk to combine.
Add sauce to the pork and let cook for another 5 minutes.
Add in sliced papaya and gently toss and heat through right before serving to
prevent the papaya from becoming mushy.
Add the papaya pork stir fry over a bed of jasmine rice and top with green
onions.
