1 cup almond milk, unsweetened – can also use oat milk or coconut milk
1 ½ tablespoons honey or maple syrup
1 cup plain Greek yogurt
½ Super Starr Papaya, cubed
¾ cup granola of choice
Directions:
Make the chia seed pudding: To a bowl or large mason jar, add chia seeds, almond milk and honey. Stir well to combine. Cover and refrigerate 2 hours, up to overnight until the chia seeds have absorbed all of the liquid.
Assemble the parfaits (Makes 2): Layer a glass or jar with ½ of the prepared chia seed pudding, ¼ cup Greek yogurt, granola, ¼ serving of the cubed papaya. Then add one more layer of Greek yogurt, and top with granola and papaya. Repeat for second parfait.
