Papaya Shrimp Spring Rolls
Ingredients:
1 Lb. ParBoiled Shrimp
1 Cup of Super Starr Papaya, cut into matchsticks
1/2 Cup Cucumber, cut into matchsticks
1/2 Cup Thinly Sliced Purple Cabbage
1/2 Cup Cilantro Leaves
1/4 Cup Mint Leaves
1/4 Cup Chives
Softened Rice Papers for Wrapping
Jalapeños (optional)
For Peanut Sauce:
1/2 Cup Smooth Peanut Butter
1 Tsp. Sesame Oil
3 Tbsp. Soy Sauce
1 Tbsp. Chili Paste
2 Tbsp. Rice Wine Vinegar
2 Tbsp. Water
Directions
:
Place softened rice paper flat on a clean surface.
Layer the shrimp, papaya, cucumber, cabbage, cilantro, and mint into the middle of the rice paper careful not to overstuff.
Gently fold over sides until you have a roll similar to a burrito.
Repeat the process with all of the ingredients.
Make the sauce by whisking peanut butter, sesame oil, soy sauce, chili paste, rice wine vinegar, and water until smooth.
Dip the spring rolls into the peanut sauce for serving.
